The 4-star resort, which was rebuilt in 2000 and has undergone an expansion of new pools and suites over the past few years. With seven pools (most of which have waterfalls), six bars, two restaurants and two fire-pit areas, it is not hard to see why this place is popular with tourists and locals alike. Guests can enjoy fishing, boat rides, and sea kayaking on their doorstep.
has no fewer than 20 restaurants and bars including the signature Ginger Moon which serves Italian and Caribbean cuisines. Italian dishes served at the Ginger Moon restaurant include traditional cioppino and zuppa di pesce, but its signature dish is the handmade spaghetti with a black squid ink sauce. Renovations were started in March 2013, but the restaurant was not ready for its grand opening. The doors were opened to the public in October 2013.
If you like Carribean cuisine, Caribbean dishes served at the restaurant include: Black eyed peas, collard greens, corn bread, whole hogs, livers, okra and sausage. Also on offer are pork, deer and elk. Steaks are from beef. The chophouse opens with dinner service, but also offers a weekend brunch menu. Wings are on the lunch menu and are also served on Friday and Saturday.
Another restaurant worth visiting is Santa Fe Trails. Santa Fe Trails is the perfect blend of elegant and quirky, just the way a New Mexican dinner should be. The restaurant hosts six diverse and delicious menus, including the Santa Fe-style marinated meats. A generous, well-stocked wine list pairs nicely with each entrée. You might also want to try Bourbon Street Food Company. It is the perfect place for a ceviche lovers day. Their playful wine lists and creative, sustainable ingredients make it a great way to try new things.
